Day 48 - October 1, 2009

Can you believe it’s already October? Where did September go? Back home the weather is getting cooler and Canadian women everywhere are turning on their ovens and baking to warm up their frigid homes. Here in California temperatures are in the 80s and some days still reach the 90s. The air conditioning is running on and off throughout the day and yet I bake.

Here is a delicious recipe my mother bakes every fall. I plan on carrying on the tradition and filling my home with the sweet smell of cinnamon and pumpkin. Enjoy these incredibly moist and absolutely scrumptious pumpkin raisin muffins!

Pumpkin Raisin Muffins


  • 4 eggs
  • 2 cups white sugar
  • 1 1/2 cups vegetable oil
  • 1 3/4 cups pumpkin
  • 3 cups flour
  • 1 tbsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp cloves
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 1/2 cups raisins (golden are delicious!)

Beat eggs slightly.

Add sugar, oil, pumpkin and beat thoroughly.

Add dry ingredients and mix until smooth.

Stir in raisins.

Fill liners or greased muffin cups 3/4 full and sprinkle tops with brown sugar.

Bake 375 F for 20 mins or until set in middle.

Thanks for these recipes, And! This is one I didn't get from Mom, but both this and those pumpkin cookies are probably worth making, so I'm glad I now know how.
